My STORY

My name is Jo Pearson.  One day I was making sourdough pancakes and had a craving for cupcakes.  I looked in my cupboard and was distraught to find I did not have the ingredients to make any.  My eyes fell on my pancake batter, and an idea was formed.  I played with that batter, tweaking the recipe, and wound up with moist and delicious Sourdough Pancake Cupcakes.   I decided they needed some stellar icing to match, so created my Maple Buttercream.  My husband, children, family, friends, and neighbors all agreed they were amazing, which gave me the encouragement to try out some more recipes.  

 

Here I am, three years later, with over 30 cake, and 30 icing recipes.  They are all original; all written by me, and all use my eleven and a half year old sourdough which has some serious character behind it.  The sourdough lends my unique cupcakes a rich flavor while keeping them moist.  Many hours have been put into keeping my sourdough alive and thriving for these eleven and a half years, and also into my recipes to ensure they are all perfectly balanced, and enjoyable.   I am constantly adding to my repertoire and enjoy coming up with new flavor combinations.  

 

I currently fall under the Cottage Food Exemption, which means I can sell my cupcakes from my home kitchen as long as I follow the regulations and health code.  My plan is to open a shop with a commercial kitchen here in Fairbanks as soon as possible.  I want to be able to have my cupcakes available daily for everyone to enjoy, and to be able to sell them for resale.  For now, you can find me Wednesdays and Saturdays at the Tanana Valley Farmer’s Market, Thursdays at Ursa Major Distilling, or by placing a special order via phone, Facebook, or my website.   

 

*Please note your order is subject to my time availability, so the earlier you order, the better.  Small orders need to be placed no later than 8pm the day before you want your treats because my sourdough needs time to work its magic before I can make these delicious cupcakes.
